Cooling Snack – Bird's Nest Rice Paper Rolls

Rice paper rolls are one of the most classic Vietnamese snacks.

Filled with refreshing vegetables and herbs, paired with sweet, fresh prawns and savory fish sauce.

Fresh, crispy, healthy, and appetizing – they're endlessly praised.

Adding bird's nest elevates the nutrition and nourishment to another level!

 

Filling Overview

 

Shredded cucumber and shredded carrot. Cucumber contains propanoic acid, which inhibits fat and aids in weight control; carrots contain β-carotene, which helps protect eyesight.

 

Vietnamese rice vermicelli. Vietnamese rice vermicelli has a soft yet chewy texture, enriching the mouthfeel of the rice paper rolls.                          

Mint leaves. Mint leaves emit a cool, aromatic scent, adding a refreshing touch to the rice paper rolls. Their aroma also helps calm emotions and promote sleep.                                  

 

Thai sweet prawns. Thai prawns have thick, firm flesh with a springy and crispy texture. When eaten with fish sauce, their sweet flavor is further enhanced.

 

Bird's Nest Rice Paper Rolls (20 rolls)

Rice Paper Rolls

Vietnamese Rice Paper (16cm) 20 sheets

Cucumber 2

Carrot 2

Rice Vermicelli 2 cakes

Mint Leaves (appropriate amount)

Thai Sweet Prawns 40

Ready-to-eat Bird's Nest (appropriate amount)

Fish Sauce Dip

Small Chili Peppers 4

Scallion ½

Minced Garlic 7g

Granulated Sugar 40g

Limes 4

Water 45ml

Fish Sauce 30g

 

Fish Sauce Dip

  Chop chili peppers and scallions and place in a bowl. Then add minced garlic, granulated sugar, lime juice, water, and fish sauce in sequence.  Stir all ingredients until well combined.

 

Prepare Ingredients

  Shred cucumber and carrot and set aside.  Season prawns with a pinch of salt and fish sauce.  Cook rice vermicelli for about 3 minutes, then strain and rinse with cold water; set aside.  Dip rice paper in water, then prepare to roll the rice paper rolls.

 

Rice Paper Roll

  Place shredded carrots, shredded cucumbers, rice vermicelli, and mint on the rice paper in sequence.  Start rolling from the outermost edge downwards, stopping after one full rotation.

As shown above, add shredded carrots, shredded cucumbers, fresh prawns, and ready-to-eat bird's nest to the remaining space.

Fold both sides of the rice paper inwards slightly, then roll directly downwards until fully sealed.

 

The bird's nest rice paper rolls are complete. Dip them in fish sauce and serve immediately.

Rice paper can be found in large supermarkets and various Southeast Asian grocery stores.

Rice paper roll ingredients can be varied according to personal taste, such as adding mango or salmon.

Maintaining the correct humidity is key to improving the texture of the rice paper skin; practice makes perfect.

It is recommended to consume them on the day they are made, otherwise, moisture loss may affect the texture of the rice paper.
