Filling Overview
Shredded cucumber and shredded carrot. Cucumber contains propanoic acid, which inhibits fat and aids in weight control; carrots contain β-carotene, which helps protect eyesight.
Vietnamese rice vermicelli. Vietnamese rice vermicelli has a soft yet chewy texture, enriching the mouthfeel of the rice paper rolls.

Vietnamese Rice Paper (16cm) 20 sheets

Rice Vermicelli 2 cakes

Small Chili Peppers 4
Scallion ½
Minced Garlic 7g
Granulated Sugar 40g
Limes 4
Water 45ml
Fish Sauce 30g
Fish Sauce Dip
Chop chili peppers and scallions and place in a bowl. Then add minced garlic, granulated sugar, lime juice, water, and fish sauce in sequence. Stir all ingredients until well combined.
Prepare Ingredients
Shred cucumber and carrot and set aside. Season prawns with a pinch of salt and fish sauce. Cook rice vermicelli for about 3 minutes, then strain and rinse with cold water; set aside. Dip rice paper in water, then prepare to roll the rice paper rolls.
Rice Paper Roll
Place shredded carrots, shredded cucumbers, rice vermicelli, and mint on the rice paper in sequence. Start rolling from the outermost edge downwards, stopping after one full rotation.
As shown above, add shredded carrots, shredded cucumbers, fresh prawns, and ready-to-eat bird's nest to the remaining space.
Fold both sides of the rice paper inwards slightly, then roll directly downwards until fully sealed.
The bird's nest rice paper rolls are complete. Dip them in fish sauce and serve immediately.
