Fish Maw

Fish maw is the "maw" in "abalone, sea cucumber, shark fin, and maw," a nutritious and precious ingredient.

Crab Meat

Crab Meat and Fish Maw Soup

Fish Maw 1 tael

​Crab Meat 100g

Crab Sticks 200g

​Shiitake Mushrooms 6 pieces

​Ginger Slices 2 pieces

Scallion 1 stalk

Clear Chicken Broth 700ml

Shaoxing Wine 15ml

Dark Soy Sauce 5ml

Salt A pinch (optional)

Cornstarch 6 teaspoons

 

Preparing Fish Maw


1. Soak the fish maw in clean water, ensuring it is fully submerged. Soak for 8 to 12 hours (depending on the type and size of the fish maw) to soften the collagen. Change the water 2 to 3 times during this period.


2. Bring ginger and scallion water to a boil, then add the fish maw and boil for 30 minutes before turning off the heat. This process removes any fishy odor.


3. Turn off the heat and wait for the water to reach room temperature. Remove the fish maw, rinse it, and then soak it in clean water and refrigerate for 8 to 12 hours.


4. After 12 hours, remove the fish maw from the refrigerator, cut into pieces, and set aside.

 

Preparing Crab Meat


Thaw frozen crab, remove the crab meat, and then add crab sticks. Set aside.

 

 

Preparing Shiitake Mushrooms


Soak shiitake mushrooms for 12 hours until fully softened. Once softened, cut into small pieces and set aside.

 

Cooking Crab Meat and Fish Maw Soup


Heat a pot, sauté ginger and scallions until fragrant, then add shiitake mushrooms and stir-fry briefly.


Pour in the clear chicken broth, add fish maw and Shaoxing wine, and cook until tender.


Add the crab meat.


Add dark soy sauce, then thicken with cornstarch and stir well. Serve.
