190g cake flour
70g sugar
12g matcha powder
520ml fresh milk
38g butter

500ml fresh cream

350ml frozen fresh ready-to-eat bird's nest
Batter
Crepes
1. Heat a non-stick pan over medium heat, gently stir the batter, and pour in an appropriate amount of batter.
2. Once poured, swirl the pan in a circular motion to evenly spread the batter into a round shape. Reduce to low heat and cook for about 30 seconds, then flip (using your hands is recommended, with heat-resistant gloves). Cook for another 30 seconds, then remove and let cool.
3. Repeat the above steps to make about 30 crepes (only 21 are actually needed, make extra as a backup).
4. Take a round mold or bowl and place it over the crepe to cut out round crepe layers of the same size.
Cream
1. Add fresh cream and sugar to a bowl.
2. Whip the cream with a whisk until it reaches 70% stiff peaks, then set aside.
Assembling the Cake
1. Place a cooled crepe on a plate.
2. Spread cream evenly, then cover with another crepe. Repeat until 21 layers are stacked.
3. Spread ready-to-eat bird's nest on two of the middle layers.
4. After stacking 21 layers, stop spreading cream.
Sprinkle with matcha powder for decoration, then refrigerate for 3 hours before serving.
Expert Tips
When making the batter, the fresh milk must be heated, otherwise the butter will not melt (alternatively, you can heat the butter until fully liquefied first).
After making the batter, it must be refrigerated for at least 1 hour. This step is very important, please do not skip it.
The first crepe usually turns out thick and ugly; it will look better as you become more skilled.
Flipping the crepes requires using both hands, so please prepare a pair of heat-resistant gloves.
The neatness of the crepes and the color of the matcha powder are key to the cake's appearance.
The thinner the crepes, the better the cake looks and the better the texture.
It's easier to whip fresh cream if it's chilled first.
